"The sweatshirt is made in / of / with wool."

We say "carved in wood/stone," but not "made in wool." I guess the difference is that we take loose pieces of wool and work with them through various stages to make the finished product. We construct something -- put it together.

To me, "made of" suggests that wool is the main "ingredient." "Made with" seems to allow other components as well.
