Which one is correct?

Omelette is made from eggs and tomatoes.
Omelette is made of eggs and tomatoes.

Both are correct.

We usually use an article: An omelette is made . . . The omlette is made.....

(I suppose technically "omlette" may be either countable or non-countable. That is, it may be considered "stuff.")

You could also say, "Omelette is made with eggs and tomatoes, or "with egg and tomato."

Or, "Omelettes are made etc."
