lylics of tennessee walts, an oldies song

hi. in the lylics, i see the apostropy words like ; i was dancin' , with my darlin', lots of times. but the last sentence ; the night they were playing the beautiful tennesee walts', it is not playin' but playing. would someone explain why please? thanks.
