Let's say that an airline puts some limitations on your luggage and you can't take more than 8KG. How would a native speaker express something along these lines: "8KG? I can't pack everything I have into 8KG!"

That sounds OK to me. When writing 8kg , don't capitalise kg .

You normally talk about packing stuff into size, not into weight.
eg 8kg? My stuff will weigh more than 8kg.
or
eg 3 cubic feet? I can't pack everything I have into 3 cubic feet!
