Love or like?

what is the main difference?

If I want to show my appreciation on a single or married man/woman so much because he/she has done something really good to me, if I say "I love you", "I love her", etc will it carry a meaning about man and woman's love? I ONLY want to show appreciation, without sense of having a love relationship

You shouldn't say you love just anybody anytime. It all depends on the culture where you are, right down to what city block you're on. In fact, if you are on a city block not in San Francisco, don't.
