There are local variations in noodle dishes. For instance, Indians have ragi noodles, and Chinese, Japanese, Korean and almost every Asian culture have many different types of noodles crafted over the years including ramen, udon, cellophane, rice noodles, soba, and so on. While the Italians have a multitude of spaghetti dishes, the Germans also have a noodle dish known as spaetzle. What’s more, in Central Asia, China, and much of Russia, lagman is a very common dish whose basic recipe has perhaps hundreds of local variations. Furthermore, macaroni, originating from Italy and made with durum wheat, is a variety of dry pasta traditionally in the shape of narrow tubes. In North America, macaroni and cheese is a popular dish which is often made with elbow macaroni. In Great Britain, known simply as macaroni cheese, is also popular.
