Because you need the modal verbs "would" or "will" when you talk about the future.
You need the helping verb "do" when you talk about the present.

What do you like to eat? (What is your current preferred food?) Answer: I like to eat vegetables.

What would you like to eat? (What do you want to eat in a future meal?) Answer: I would like some meatloaf, please.

I meant why do we say: what do you want to be in the future? istead of: What will you want to be in the future?
