Letter writing

When writing a business letter to Mr. John Smith, should the recipient of the letter be referred to in the second person (you) or in the third person (Mr. John Smith).

ie.

Dear Mr. Smith,

In my earlier conversation with Mr. Smith, I mentioned the importance of.........

OR

Dear Mr. Smith,

In my earlier conversation with you, I mentioned the importance of.........

Refer to the recipient as you and to yourself as I, just as you would if you were having a conversation. Although you may want to say "In our recent conversation" instead of making it "your" conversation -- surely he was a part of it.
