Is this the correct use of the word leeway? Could you correct it please?

What leeway can I give an expiration date on food before I throw it away? Do I throw food out on the expiration date or can I keep it a little longer?

Do I have to throw out food on its expiration date, or do I have a little leeway?

(You generally do, by the way. It's a "sell-by" date or a "best-by" date, not a "toxic if consumed on or after" date.)
