'Knowledge of' would be more correct in this instance, but you could you 'knowledge in the field of polycarbonate plastics' as well. What is the context? It is a little odd (to my ear) to thank someone for simply knowing something.

or

'Thank you for passing on some of your knowledge in the field of polycarbonate plastics to me'

I would probably use 'some of', unless you feel that they taught you absolutely everything they know on the subject. 'Imparting' would also be a suitable replacement
