Miss Biaocci would, I am sure, be a real asset to your organisation, knowing as she does a great deal about the way a company such as yours operates.
Somehow "knowing" is out of place in this sentence, IMO.

Somehow I sense it should be either "knowing that" or "as".
"knowing as she does" is difficult for me to understand. Is "as she does" the object of "knowing"? Or is it an idiom?

You can't say 'knowing as a great deal about...' or 'knowing that a great deal about...'
a great deal about is being used here in the sense of 'a lot about'

Another problem here though is that 'knowing as she does' is very formal, but 'a lot about it' is quite informal, so they create an awkward sentence when combined.
