If "only" is to be introduced, the natural word orders for me are "I know of only two ..." (formally preferable, in my view) or "I only know of two ..." (common everyday style).

No, that one is correct. Sorry, I was commenting on (2) and forgot to mention (1). Again, in everyday style you would often hear "I only know two easy ways ...".
