When you experience things you haven't known, you may be able to broaden your mind.
When you experience things you don't know, you may be able to broaden your mind.

Which sentence is correct?
Or are these all OK, but the meaning is a bit different from each other?

Only #1 makes sense when carefully considered, though no doubt you will hear all three.

Hmm. Clive and I see things differently. I see #2 and #3 as logically improbable since we presumably 'know' at the same time that we 'experience'.

I see this as one of those cases where logic does not strictly apply to language. If you said #1 or especially #2 to me, it would take me a moment to figure out your meaning. Not so with #3.
