Knead the dough until smooth. (example sentence for 'knead')

Should it be 'until it's smooth' instead?

Hi, I do a lot of cooking and most recipes use a sort of simplified English like your first sentence. It's just simpler. However, there's nothing wrong with saying "until it's smooth," and some recipes use standard English.
