Sometimes I come across the word “kidnapee” to mean a kidnapped person. Is this acceptable? Thanks.

It's listed by Merriam Webster, so it must be okay.  I've never heard it used.

It's much more common than "kidnapee."

The original phrasing of your original question is also okay when used casually.

And you can say, "I come across AAA used to mean BBB."
