Just as grandfather was showing Tommy how to put bait on fishing rod, they heard a strange noise behind them.

Could I say when instead of just as in the sentence above?

Just as grandfather was showing Tommy how to put bait on a fishing rod, they heard a strange noise behind them. 'Just as' suggests immediacy, even though'..was showing ... stresses duration. My understanding is that the noise happened when Grandfather began ,
