So you think that Junior mistress is a younger mistress and she was Froebel trained, and the Senior mistress is the older mistress who's probably in charge of the other and she also graduated from university.

I think the basic meaning of junior and senior is that is that the Senior mistress is able to give the Junior mistress orders.
We are not told anything about their ages.
