I've seen/I saw

Talking to a friend in his car:

That's like the most insane dashboard I've ever seen. Or should it be:

That's like the most insane dashboard I ever saw.

What's the difference between the two sentences, could you please explain it in detail, so I get an understanding of when to use it.
