I've had a cold for a week. (This is about a period of time that continues up to the present.)
I had a cold last week. (This is about a point in time in the past.)

In spoken form I doubt anyone will notice a difference. You are however correct in your use of "I've had."

If you were referring to one experience the correct grammar would be "I had."

"I have had" (I've had) is multiple occurrences in context while "I had" is only one.

Once you are qualified as a dentist, you retain that certification. You are a dentist. Whether you practice your dentistry or not can change.
