Would you please explain when I should use "Hi, it's Paolo from XYZ company" and when I should use "Hi, I'm Paolo from XYZ company"? For instance, in a YouTube video, which of the two should I use? Thank you.
Use "I'm" until you have a following. Then use "it's".

Both are fine. It seems to me that on YouTube they usually use the second one, the one with "I'm", but either one is OK.
