It's not

"It's not that I don't like burgers, it's just that I want to eat some pizza now."

My question:
Is 'that' and 'just' can be omitted and break the sentence with a period as in the last sentence?

"It's not I don't like burgers, it's I want to eat some pizza now."
"It's not I don't like burgers, it's just I want to eat some pizza now."
"It's not I don't like burgers. It's I want to eat some pizza now."

You can leave out the "just," you can break the sentence into two sentences, but you can't leave out the "that."

Which 'that' are you referring to? I just want to be sure which one is safe to omit.
