Can I say,

The tourists enjoyed the trip because it was educational and wonderful / and ( had ) a wonderful day.

Saying something was "wonderful" is essentially the same as saying you enjoyed it (very much), so the sense of "cause and effect" that you expect from "because" doesn't really work.

(b) They enjoyed the trip that was educational.
