it or that?

Hi everybody

I’m not quite sure what subject I should use in the following sentences. I mean the second sentence. Should it be that, shouldn’t it?

That's why those who quit smoking improve both their appetite and metabolism eventually. That explains why you tend to gain your pounds back after discarding bad habit.

That's why those who quit smoking experience increased appetite and eventually higher metabolism, which explains why they tend to pile on the pounds after giving up the disgusting habit. "That" works in your second sentence. "It" is grammatical too, but in your sentence, if you were to use "it", it would not be not clear what the antecedent was.
