Scenario: I'm chosing a hobby and I say:

1. Cars it is. (Is this correct? How come I can use 'it' with 'cars'? I hear a lot of people use this structure.)

'It' refers to 'my hobby', Jack. 'Cars it is' is your answer to 'What is your hobby?'. 'My hobby is cars.' You wouldn't say, 'My hobby are cars'.
