It also reflects ...

Hi

An author of a book writes: Rip, a triathlete and firefighter, transformed the health of his whole firehouse when they did a collective experiment with a plant-based diet based on research by Rip's father. It also reflects the experience of many of my fellow marathoners and triathletes that we feel better on a non-dairy vegetarian diet.

I understand that "when they did" refers to the firefighters?

Does the part "it also reflects" refers to the experiment? In other words it says: "the experiences of many of my fellow marathoners and triathletes also reflect the results of this experiment, namely that we feel better on a non-dairy vegetarian diet"?

Yes, "they" refers to the firefighters. I am puzzling a bit about the intention of the last sentence. My guess is that "it" was supposed to refer to the results of the experiment in the firehouse, but the author didn't notice that there was not really a proper antecedent (at least, not in the part quoted).
