Isn'it strange?

I'm working on grammar aspect of the following phrases and I wanted you to try to explain me the grammatical roots of these phrases and why it is so difficult for not native speakers to understand them?

-One too many

-not once

-at no time

-I can't help ...ing

I can't half...
