Hello! Could you help me, please?

I have a question about spelling. As far as I know in the words like "organise", "critisise", etc. "s" is written in British English and "z" - in American English. Could you tell me whether it is true, and which variant is used more often in other variants of the English Language, and generally in the world?

Thank you!
