The court approved the adoption with which John S. and Maggy S. adopted Vicky V.

"the adoption with which ... adopted" is very awkward. Perhaps this is meant:

The court approved the process/procedure by which John S. and Maggy S. adopted Vicky V.

Or just:

The court approved the adoption of Vicky V by John S. and Maggy S.
