If I record all the hours that I have worked in a notebook so that when I get my paycheque I can double-check with the notebook to see if I got paid correctly, can I also say "I'm keeping track of all my hours in the notebook" Is "keeping track" the right words to use?
Also, if I were to put a heading in one of the pages inside the notebook, can I call it "hour tracking"?

Yes, "keeping track" is correct. Since this notebook is primarily for your own use, you can use whatever heading sounds best to you. "Hour tracking" is fine. Other suggestions: "Hours Worked," "Record of Hours Worked," "Tracking Hours," etc.

"hour tracking" I've never heard this collocation.

"Keeping track" is an idiom which is not represented in your second expression.

"X tracking" is a common exercise, but it's usually applied to something a little more complex.

It would be appropriate for an attorney who splits his time between several clients and needs to keep track of his "billable hours," and which client should be billed for the work.
