Last Saturday, there were many people shopping in the Henrys Jewellery.

I personally think there is nothing wrong with the sentence.

I added an apostrophe to Henry's and corrected your spelling of jewelry.
I don't know if a comma should be used after Saturday.

Last Saturday, there were many people shopping at Henry's Jewelry.

Last Saturday, there were many people shopping in the Henry's Jewelry store.

Last Saturday there were many people shopping at Henry's Jewelry.

Last Saturday there were many people shopping in the Henry's Jewelry store.

One of those four must be the best, but I am not sure which one it is.
I would probably use the fourth one, at the bottom.

Hopefully, one of the trained English teachers will come along
and tell you which of these four sentences is the best.

Since that is the name of the shop. Henrys or Henry's are OK

depending on what the name the owner registered

.

I agree that shopping ( at ) is better than ( in ) since it refers to the place where people do the shopping.

In my opinion, with or without is not a big deal

. I personally won't use it.

shopping ( at ) Henry's Jewelry or shopping ( in ) Henry's Jewelry store. Since ' store ' is mentioned, people are inside the premises
