Is this sentence correct?

Each year, thousands of people get lost in the Arizona desert. Of these, some 200 will die. Is it correct to use "of these" or should I use "of those"? Is it grammatically correct to begin a sentence using "Of these"?

Thanks!

This is about words arrangement and not so much about grammar. To place the important words in front to stress their significance in a sentence. " Now is the time to take a shot " said the instructor.
