I see nothing wrong with it.

I disagree when it comes to titles: For the second sentence, I would either say ...by the president, John Doe, in his... OR I would say ... by president John Doe in his...

The same with professor... by the professor, Mary Smith, in her... or ...by professor Mary Smith in her...

Or sheriff.

I believe there are only a few titles that would be appropriate to include a "the"

You are right as far as Anglo-Saxon titles are concerned. It is quite common to include the before a non-Anglo-Saxon title:
the Emperor William.

Thank you all is just fine with me. A very pedantic person might prefer it with a comma: thank you, all. Thank to you all is ungrammatical.

Thank-yous is correct. English is very flexible regarding word-formation and plurals. It has to be, otherwise communicating in English would be very difficult since there are so few inflections.
