I think it would be better to say 'we went clubbing over the new year' or 'we went clubbing on new years eve'

"We went clubbing over the new year" is wrong. "We went clubbing on New Year's Eve" is right (note capitalization and apostrophe). Another possibility is "We went clubbing over New Year's," which is a more general way of saying "...during the New Year's holiday."

Sure! Many, especially baby seals, would probably think that a pretty violent way to celebrate the New Year.

That might be correct in American English but, it is definitely not in the English of England. Without at least one other word after the word Year's, it is unfinished. Do you mean New Year's eve, New Year's day, New Year's eve celebrations
