"When I take a project" is unclear (at least to me). Maybe this would make more sense: When I'm working on a project, I can hardly take care of my family.

"When I ( "take on" or "undertake" ) a major project, I can hardly take care of my family, because I totally engross in it.

I can extract the meaning from your sentence, but it is not semantically smooth without more context. You wanted to say you will be so busy with a big / new project that you will not be able to provide quality time to your kids and wife.
The idiom is " take care of ". "Hardly"
