1. You have two sentences, though you have punctuated them as if they were one.

3. You're saying "we could meet up" OR "through message". It sounds like you left out something. It's like saying

Better, but you still haven't made a parallel kind of connection with the "or". You need something like this:

Either we could meet up in our spare time, or we could exchange texts or emails.

You don't really need "Either" at the beginning, but it's OK.

If you will be "exchanging", then there certainly will be more than one text or email, so you need the plurals.

If you want to think about it anymore, you might consider whether you really mean that you are going to meet up in your spare time, but not exchange texts and emails in your spare time.
