Is this correct?

Would I be correct in saying this?

"I'm sorry if I don't make it to your party."

It is very strange to be sorry for something you haven't done yet, and that's what the sentence is saying. Maybe you mean I'm sorry that I didn't make it to your party. Being sorry in advance is not logical.

If you know in advance you will not be able to go, you can say either "I'm sorry I can't make it to your party" or "I'm sorry I won't be able to make it to your party."

May I say it this way? "If I don't, + sentence in future tense"? Say,

"If I don't make it on Thursday, I'll do your laundry for you."

If you're unsure, I think the best thing to say would be "I hope I'll be able to make it to your party."
