Is this "colors" incorrect?

I'd like to ask about the sentence below.

"Many kinds of fruit change colors as they become ripe."

My English grammar drill book says that this "colors" has to be "color", but I cannot help thinking that it all depends on the context.
So, my questions are:
1) Do you think that this "colors" is incorrect?
2) If yes, would you please explain why?
3) If no, what difference would be made by each choice of the words?

I'd appreciate it if I was given any advice.

Your book is right in this case. We say that fruit, leaves etc. change color .

Sorry, I don't think I was clarifying my point in my question.
My book says that "color" in "change color" is uncountable.
I know that most dictionaries say the same thing.
However, I saw a book published, titled "Fall Leaves Change Colors".

Then, why is "colors" in my "fruit" sentence wrong?
The words, "Many kinds" and "they", seem to indic
