Your sentence is good and correct. With two small changes, it will sound more natural:
"Every month, more than 8,000,000 hot drinks are prepared by our vending machines, 66% of which are coffees / cups of coffee."
You can also replace "prepared" with "served", which I think would be more common in this context.
