at least seems fine to me. I'd consider dropping the first comma.

quite more than does not. I suggest eg simply 'more than', or 'quite a lot more than'.

I'd also remove the commas around 'on the contrary'.

Everyone who goes through life develops their right or left brain completely before their mid 20s, then if they're lucky and have had enough development, they being to develop the other side. I've personally developed both to a great degree, so I do like structure and order.
