Hi,

He said he was going to get there in an hour, so I thought I'd have enough time to prepare my homework.

However, he had arrived 30 minutes earlier and interrupted me to finish preparing my homework.

Interrupt can be used with a person or an event. In this case the event is your completion of your homework. The first part of your sentence is fine, but I would re-word the end slightly, like this:

..., but he arrived 30 minutes early and interrupted it so I didn't have time to finish.
