Is it correct to say this?

I'm studying in England now. One day I came across my friend on the street and he said "why are you in England?" and I said "I am going on my exchange now."

Is it grammatically okay to say I am going on my exchange now?

No. If you say "I am going" it means you are about to leave to go do something. I am doing my exchange now might work, but the term "my exchange" is not one that I know.

I am sorry to be picky, but can I rewrite your sentence by adding the word "of," like this?

... the term "my exchange" is not (the?????) one that I know of.

If you said "the one that I know [of]" you are saying there is only ONE term that I've ever heard used, and there are probably several. Without the "the," I'm simply saying I don't know this term.

The "of" is optional, but for me, it is less common to include it.

Can I say I am doing my exchange program now? This sounds OK to me. You don't need to say 'now'.
