Is it, "all testimonies" or "all testimony"?

Which would be grammatically correct, testimony or testimonies?

Investigators write all testimony/testimonies in their own words, on behalf of each and every suspect.

When you say 'their', are you intending to refer to the investigators or to the suspects?

As you have written it, the word refers to the investigators.
