Is it a correct sentence?

Some people are so very fortunate that they have garden.

Why not gardens?

which one is right car or cars?

Some people are so fortunate that they have a luxurious car.

If you mean that each fortunate person has one, or at least one, luxurious car, it's "car". English doesn't handle number very well. If you put "cars", each person has more than one, so we're stuck with the mismatch in number.
