This style (mixing of "one" and "him", "his" etc.) is traditionally correct. It sounds increasingly old-fashioned, in my opinion, and people may also object that it seems to be excluding women from the conversation. I would not recommend that you use it yourself.

Not in British English. If one insists on using the rather pompous sounding 'one', one must use 'one' all the way through.

The sentence is taken from the sermon given by a Buddhist priest. So I think sometimes it is not so clear to those who are non-Buddhist.

For this particular sentence, I would just omit the final pronoun altogether.
ie . . . one brings great delight and happiness to all who hear.
