Never. Do you have this situation in mind?:

A: Hi!
B: Hi yourself.

To me, that would sound rude or sarcastic.

Oh. I can't recall ever hearing it. Were these American movies? Perhaps it is something that is said more in America?

Yes. Most of those movies were American I'd say. Initally I thought it was offensive but then I heard it in a few movies and people who used hi yourself didn't seem to be offended or intend to offend anyone...
