Is 'ever' redundant?

He ever told me that he did not like dancing, but nowadays he is learning dancing.

Is the sentence correct? Is 'ever' correct?

ever is not correct. I'm not sure why you included it. It is not typically used in affirmative statements. It means "at any time" in questions.

Did you ever see it? = Did you see it at any time?

I agree with Jim. However, instead of "ever" you could use "always".

Yes, you can use the word "once" if he told you only one single time.

It is my understanding that ever is a sense of meaning towards time .. 

For example

Don't do that. (Meaning to not do something possibly meaning at that particular time)

Don't ever do that ( Meaning.. to never do it again)
