What does irrelevance mean in:

With the destruction of boundaries entailed by the consumption of flesh, excrement, and so on, goes an affirmation of the irrelevance of caste boundaries.

If you say that something is irrelevant, you mean that it is not important in a situation.

Right. Obviously that is defining adjective "irrelevant" rather than noun "irrelevance", but I'm sure you realise that.

But this doesn't make sense. I think theauthor wanted to say that the caste system is something bad

Well, it can't mean anything else. If it definitely does not make sense in context then it must be an error. Of course, I haven't read the whole text, but "irrelevance of caste boundaries" does at least seem consistent with "destruction of boundaries" earlier in the same sentence.
