The main sentences are not examples of inversion. They are the regular SVO order. The tag question is in interrogative order.

Inversion is used only in very a specific set of cases. Here is a good list with examples.

Because English is not just spoken. It is written as well. And writers do write that way.

Students who don't understand structures like "Never have I seen ..." when they read them in a book are puzzled by them
