In/on the evening

I encountered a SAT practice question (identifying sentence error):

The radio station received the most number of calls from listeners on the evening it aired a discussion of the musics of Aretha Franklin.

The solution is that 'the most number' is unidiomatic; it should be 'the largest number'. This I understand, but I don't why 'on the evening' is as it is and not 'in the evening'?

"In the evening" denotes every evening whereas "on the evening" refers to that particular evening, for example you might say on Sunday evening.
