Ing question

I am really confused in using "ing", i always have doubt when should or shouldn't use it.

I know that when you doing something then you use "ing" after the verb, something like "i am eating" , "i am running" something. But what about something like this?

"I look forward speaking to you"? speaking is not doing right now, why "ing"?

also "I have reviewed your resume, and am interested in further discussing with you the opportunities available here" why "ing" after discuss? why not just discuss?

We can change a verb into a noun by adding '-ing'. [Running is good for your health. I enjoy reading.]

It can also be used as an adjective. [a bubbling brook, a smoking gun, a burning bush]
